Let me tell you, these magical bars are the BEST new dessert in my house! Chocolate gooey marshmallow brownie goodness. These have turned into a huge hit and I can’t get them baked fast enough!

To be honest, yes there is a fair amount of sugar alcohols added here.. BUT for 16 squares, you really only need that small bite. Trust me, they are totally worth it!

The classic version of Mud bars are well known for being cloyingly sweet, so only a piece is usually consumed. Also, they usually require a TON of sugar and other non-keto ingredients. You will flip over how wonderful and satisfying these are!

Upon testing, I discovered the bars can be made in a standard 8×8 brownie pan, or a 9×5 bread loaf pan. Both worked beautifully. With the loaf pan, I cut the brownie in half and added that extra layer in between. (See the photo’s for how pretty it is!)

Keto Mississippi Mud Bars Recipe

This Keto Mississippi Mud Bars Recipe is an amazing version of the old time classic, transformed into a Keto/Low Carb delicious treat. Your kids won’t even mind that these are sugar free!

Makes: 16 bars

Keto Mississippi Mud Bars Recipe Ingredients

Brownie-

8 tbs (1 stick) Unsalted butter

1/2 c. Swerve, Brown

1/4 c. Lakanto Monkfruit Confectioners Sweetener

1/4 c. Organic Cacao Powder

1/2 tsp pink salt

3 Large eggs, lightly beaten

1 tsp vanilla extract

1 c. Almond flour

Marshmallow layer-

1 batch Keto Marshmallow Creme Fluff Recipe found here

Keto Marshmallow Creme Fluff Recipe

Chocolate Layer-

1/4 c. Lily’s Dark Chocolate Chips (or make your own sugar free chocolate chips)

1/4 c. Heavy Whipping Cream

1/8 tsp Pink salt

5 drops SweetLeaf Liquid Stevia (optional)

5 drops Caramel Creme Brulee background flavor (optional)

Keto Mississippi Mud Bars Recipe Instructions

  1. Preheat oven to 350 degrees.
  2. Prepare 8×8 brownie pan- lined with parchment paper and lightly sprayed.
  3. Melt butter, then add both sweeteners in a large mixing boil. Mix until creamed.
  4. Add cacao and salt, then blend again until fully mixed.
  5. Pour in eggs and vanilla, lightly blend together.
  6. Fold in almond flour, just until incorporated.
  7. Bake for 25 mins, then cool for 10 mins.
  8. Spread Keto Marshmallow Creme Fluffover evenly, then put in the fridge.
  9. Heat heavy whipping cream until hot, then pour over the chocolate chips.
  10. Blend until melted and smooth.
  11. Add the melted chocolate over top of the marshmallow layer and return to the fridge until set.
  12. Cut in 16 squares and keep stored in fridge.

Notes

You can sub for any Keto-Friendly sweetener you like, but I do recommend the first 1/2 c. of Swerve Brown, as it adds to the chocolate flavor in the brownie.

In the Lily’s chocolate layer, you could also melt the chips with 1 tbs coconut oil. This layer will become more solid chocolate vs. Using the HWC.

I added a few drops of this Caramel Creme Brulee background flavor, completely optional but I liked that little extra depth of flavor! I use this often.

These bars can also be made in a 9×5 bread loaf pan. Add an additional 5-10 mins bake time.
